The purchase of good quality fresh caviar has become a bit of a minefield for the consumer recently. Exports from Iran and Russia have been banned and as a result there has been much misnaming of Chinese farmed caviar as Beluga and labelling of some product as fresh, when it is in fact pasteurised. Always check for the producer & quality control code, which must, by law, be stamped on all caviar containers sold in Europe.
Perlita Caviar is obtained from Siberian Baeri "Grand Cru" sturgeon, legally farmed in France, the end result being a high quality fresh caviar with an excellent appearance and lovely nutty, buttery taste.
